• 250g Fresh Cod Fillets • 135g Cherry Tomatoes • 150ml White Wine • 1 Garlic Clove • 1 pinch Chilli Flakes • 1 tsp Dried Parsley • 10ml Lemon Juice • 2 slices Parma Ham

Method

Pre-heat the oven to 200°C/gas mark 6. Cut the tomatoes into quarters. Peel and finely chop the garlic. Place the tomatoes, garlic, white wine, parsley, lemon juice and chilli flakes into a small saucepan and bring to the boil. Simmer gently for 5 minutes with the lid on. Meanwhile, cut the cod steaks or fold them to make 2 neat parcels, then wrap the Parma ham around them. Pour the tomato sauce mix into a small roasting dish with the cod parcels on top. Roast in the oven for 20 minutes and serve immediately.
