SERVES: 2 PREP: 3 mins

• 80ml Old Hopkins Spiced Rum • Juice ½ Lime

• Juice ½ small Lemon • Lemon and Lime slices

Mix the rum, the lemon and lime juice and ground ginger together. Divide this between 2 tall glasses. Pour half the IPA in each glass. Top each glass with the lemonade – add some lemon and lime slices and serve.

Scottish Buffalo Mozzarella, Pancetta & Spinach Arancini SERVES: 4 PREP: 30 mins mins COOK: 25 mins Ingredients • 1 x 125g drained Scottish Buffalo Mozzarella • 80g Fresh Spinach Leaves • 85g Smoked Pancetta Cubes

The Buffalo

• 300g cooked Long Grain Rice • 100g Fresh Breadcrumbs • 100g Plain Flour • 2 large Eggs, beaten • Sea Salt and Black Pepper • 10ml Olive Oil • Vegetable Oil for deep frying

The Buffalo Farm in Fife has produced Scottish Buffalo Mozzarella for over 2 years now and we are proud to stock it in our Scottish stores! Founder Steve Mitchell has dreamed of becoming Scotland’s first producer of Buffalo Mozzarella ever since the farm opened in 2005. “My journey hasn’t been without challenge. Aldi Scotland is a central part of our story. Without their support, my vision wouldn’t now be a reality and we are hugely grateful for the guidance their team has provided

• 70g Ricotta Cheese • 30ml Lemon Juice • 2 Garlic Cloves

Method Peel and mince the garlic. Roughly chop the spinach leaves. Sauté the pancetta in a frying pan along with the olive oil until just browned, add the spinach leaves and garlic to the pan and cook another minute to wilt the leaves. Put this mixture, along with the rice, lemon juice and ricotta, into a mixing bowl, season with salt and pepper and mix together. Drain the liquid from the mozzarella and cut into 12 chunks. Divide the rice mixture into 12. In the palm of your hand, wrap each portion of the rice around a chunk of the mozzarella and form into a ball. Put the flour in one bowl, the beaten eggs into another and the breadcrumbs into a third bowl. Dip each ball in the flour to coat, then the egg wash and then the breadcrumbs. Heat some oil in a pan until it reaches 180°C, or when a small cube of bread turns golden in 30/40 seconds. Carefully fry the balls in batches of 4 for 3 to 4 minutes – until golden brown – keep them warm while you cook the rest.
