RECIPE IDEA.

SERVES 4 | PREP 15 MINS | COOK 5 MINS Greek Tomato & Feta Fritters.

Ingredients • 1 small Cucumber • 3 large Tomatoes • ½ an Onion • ½ bunch of Parsley • ½ bunch Mint • 1 Egg • 1 Courgette • 8-10 tbsp Self-Raising Flour • 200g Feta • 300g Greek Yogurt • ½ a Lemon • 1 Garlic Clove

Method Halve the cucumber lengthways, scrape out the seeds and grate into a sieve. Mix with a pinch of salt and allow to drain. Finely chop the tomatoes, onion and herbs, keeping half the mint to one side. Add the egg and grate in the courgette. Add 8-10 tablespoons of flour, the feta and a large pinch of salt and mix. Heat ½ an inch of vegetable oil in a

non-stick pan. Add the mix in heaped tablespoons, keeping them apart. Fry for 3 minutes each side. Remove and place on kitchen paper. Squeeze any remaining liquid from the cucumber and mix with the yogurt, juice of ½ a lemon, the remaining mint and a pinch of salt. Grate in the garlic and spread over a small plate with the fritters served on top.
