RED CABBAGE & POTATO HASH
A vibrant little dish of braised red cabbage, celery, potatoes and onion. Easy to make and delicious as a winter warmer.
SERVES 6 | PREP 15 MINS | COOK 40 MINS
400g Red Cabbage 1 large Red Onion 400g Potatoes 1 stick Celery 2 Garlic Cloves 350ml Boiling Water Juice of 1 Lemon
50ml Soy Sauce 1 tsp Paprika 1 flat tsp Dried Oregano 30g Tomato Purée Sea Salt & Black Pepper Fresh Parsley or Thyme

1. Peel the onion and thinly slice. 2. Thinly slice the red cabbage. 3. Wash the celery and thinly slice. 4. Peel and chop the potatoes intomedium-sized chunks. 5. Peel and finely chop the garlic. 6. Put all vegetables into a large saucepan. 7. In a large bowl, mix the water, lemon juice, soy sauce, paprika, oregano and tomato purée, then season with some salt and black pepper. 8. Pour over the vegetables, bring to the boil, then cover and simmer for 40 minutes. 9. Serve topped with fresh parsley or thyme.
