Ingredients • 200g Scottish Chicken Breast • 100g Haggis • 60g Mozzarella • 4 Scottish Streaky Bacon Rashers
For the relish • 1 small Red Onion • 20ml Scottish Rapeseed Oil • 150ml Iron Brew • 80g Tomato Ketchup • 15ml Soy Sauce • 50ml Red Wine Vinegar

A refreshing Scottish gin cocktail, perfect for summer gatherings.
Ingredients • 120ml Scottish Gin • 25g Fresh Mint • ½ Cucumber, sliced • Juice of 1 Lemon
• 2 tsp Honey • 60ml Cloudy Apple Juice • Sparkling White Wine
Method Juice the lemon and mix with the honey.
Keep 4 sprigs of mint and tear up the rest. Keep 8 slices of cucumber for garnish. Put the torn mint in a cocktail shaker along with the remaining cucumber, apple juice, lemon, honey and gin. Add some ice cubes and shake well. Divide between 4 glasses – top with the sparkling white wine and garnish with mint and cucumber to serve.
