The perfect midweek meal!
Cumin Specially Selected Pork Flatbreads with Beetroot Houmous, Pickled Cabbage Slaw & Feta.
Ingredients • 1 tbsp Olive Oil • ½ small Red Onion, finely sliced • ½ tbsp White Wine Vinegar • ½ tsp Caster Sugar • ½ tsp Salt • 4 Specially Selected Pork Loin Medallions, cut into 3cm chunks • 1 tbsp Cumin • Juice of 1 Lemon • 2 Garlic Cloves, finely chopped • 125g vac packed Cooked Beetroot, roughly chopped • ½ can Chickpeas, drained and liquid reserved • 30g Feta, crumbled • ½ small Sweetheart Cabbage, core removed and finely shredded • Handful of Fresh Dill or Mint Leaves, roughly torn • 2 Flatbreads • Salt and Pepper to taste
Cooking Method 1. Start with your pickled slaw by adding the red onion, vinegar, sugar and ¼ tsp salt to a small bowl. Mix well and leave at room temperature for 30 minutes, stirring every now and then. 2. Marinade the pork by adding the olive oil, cumin, lemon juice, 1 finely chopped garlic clove and ¼ tsp salt to a small bowl and mixing well before pouring this over the pork pieces and massaging it into the meat. Leave for 30 minutes at room temperature while you make the houmous. 3. Add the chopped cooked beetroot, chickpeas, a splash of the chickpea water, 15g crumbled feta, remaining garlic clove and some seasoning to a blender. Blend well until the houmous is thick and smooth, you may need to add more liquid from the chickpea can or a splash of water. Season to taste and set aside. 4. Once your red onion has had 30 minutes to pickle, add the finely shredded cabbage and a handful of dill or mint leaves and mix well. 5. Thread the pork onto skewers and fry in a non-stick frying pan or griddle pan until nicely caramelised on each side and cooked through. Leave to rest for a few minutes while you heat up the flatbreads. 6. Spread some houmous onto each flatbread and top with the pork kebabs, the remaining crumbled feta and a spoonful of the pickled slaw on the side.
