Pre-heat the oven to 200°C/400°F/Gas Mark 6. Wash the leek and thinly

milk together. Place the haggis mix down the centre of the pastry. Fold one side of the pastry over the mix. Put some egg wash on this edge then fold over the other side and seal. Turn the roll over so the seam is at the bottom. Brush the egg wash all over the roll. Cut into 8 and put onto a greased baking sheet. Make a couple of small slits on the top of each roll. Bake in the oven for 25 minutes until golden brown. Serve hot or cold.

• 260g Scottish Ingredients

• 100g Fresh

Buffalo Mozzarella

Breadcrumbs • 100g Plain Flour • 2 Large Scottish Eggs, beaten • Sea Salt and Black Pepper • 10ml Olive Oil • Vegetable Oil for deep frying

• 80g Fresh

Spinach Leaves

• 85g Smoked

Pancetta Cubes • 70g Ricotta Cheese • 30ml Lemon Juice • 2 Garlic Cloves • 300g Cooked Long Grain Rice

Peel and mince the garlic. Roughly chop the spinach leaves. Sauté the pancetta in a frying pan along with the olive oil until just browned. Add the spinach leaves and garlic to the pan and cook for another minute to wilt the leaves.Put this mixture along with the rice, lemon juice and ricotta into a mixing bowl, season with salt and pepper and mix together. Drain the liquid from the mozzarella and cut into 12 chunks. Divide the rice mixture into 12. In the palm of your hand, wrap each portion of the rice around a chunk of the mozzarella and form into a ball. Put the flour in one bowl, the beaten eggs into another and the breadcrumbs into a third bowl. Dip each ball in the flour to coat, then the egg wash and then the breadcrumbs. Heat some vegetable oil in a pan until it reaches 180°C or when a small cube of bread turns golden in 30-40 seconds. Carefully fry the balls in batches of 4 for 3-4 minutes until golden brown, then keep them warm while you cook the rest. Method

Method

If possible, prepare the pickle 24 hours in advance in order to give the flavours time to develop. If not, try to leave for 3-4 hours. Any unused pickle can be stored in the refrigerator and served with cold cuts. Cut out the tough core from the centre of the red cabbage, then halve lengthways. Use a sharp knife to very finely shred the cabbage and place in a mixing bowl. Add the lime juice and ginger and sprinkle over the sugar. Stir well and set aside. Leave to pickle for

at least 3-4 hours until the sugar has dissolved and the cabbage is softened and has become a rich purple colour. To prepare the canapés, toast the bread then allow to cool. Use either a 4cm pastry cutter to cut 4 rounds from each slice or, alternatively, remove the crusts and cut each slice into 4 squares. Drain the liquid from the red cabbage and place a teaspoonful onto each toast. Top with a small wedge of cheese and walnut pieces. Garnish each with a small sprig of fresh thyme.

You will need • 300g Scottish Porridge Oats

• 70g Foodie Market Fruit & Nut Mix • 70g Foodie Market Seed Mix • 150g Berry Mix

• 100ml Maple Syrup • 35ml Runny Honey • 135ml Coconut Oil

Method Pre-heat the oven to 200°C/400°F/Gas Mark 6. Line a large baking tray with non-stick baking parchment. Mix together the oats, oil, honey and maple syrup. Chop any of the larger nuts up in the bounty mix and add all these along with the seeds and mix well. Lay the oat mixture on the baking sheet and bake for 10 minutes. Remove from the oven and with a fork stir them around, then bake for another 10 minutes. Allow to cool, add the berry mix and store in an airtight container.

You will need • 1 Cauliflower • 3 Garlic Cloves • 1 Red Chilli, approx. 15g • 1 x 10g piece peeled Fresh Ginger • 1 tsp ground Cumin • 1 tsp Paprika • 2 tsp Curry Powder • 1 Lemon • 2 Red Onions dinner Sri Lankan Style Curried Cauliflower

• 30g Cashew Nuts • 30g Blanched Almonds • 1 x 400ml Coconut Milk • 1 x 400g Chopped Tinned Tomatoes • 1 x 400g Tin of Chickpeas • 100g Baby Spinach Leaves • 35ml Scottish Rapeseed Oil • Sea Salt and Black Pepper

Method Peel the onions, halve and thinly slice. Peel and mince the garlic. Grate or finely chop the ginger. Finely chop the chilli along with the seeds. In a wok, sauté the onions in the oil for 4 minutes on a low heat. Add the nuts and cook for another minute. Add the chilli, garlic, ginger, ground cumin, paprika and curry powder. Cook on a low heat for a minute, stirring as you cook. Then, add the coconut milk and the chopped tomatoes. Grate the lemon and juice, then add the rind and juice to the curry sauce. Bring the sauce to the boil, season with some salt and plenty of black pepper. Cut the cauliflower into eighths and add to the sauce. Drain the chickpeas and add to the wok. Gently cook for about 25 minutes until the cauliflower is just cooked and the sauce has thickened. Then add the spinach leaves, stir through and cook for another 5 minutes. Serve alongside some basmati rice.
