HOW TO MAKE A PEPPERCORN SAUCE.
1 Crack 15g of black peppercorns in a pestle and mortar. In a small saucepan, melt 35g of butter on a low heat and gradually add 35g of flour. Mix well until you have a thick, smooth paste. 2 Cook for a couple of minutes, add 1 tbsp of brandy and mix well to ensure the alcohol is cooked off. 3 Gradually add 200ml milk, mixing well after each addition. Once combined, add 100ml chicken stock and black peppercorns and season with salt. Simmer gently until reduced.
