Wagyu & Caramelised Onion Ciabatta Rolls SERVES 4 | PREP 5 MINS | COOK 20 MINS
SANDWICH.
Ingredients • 2 Wagyu Premium Steaks approx. 0.17kg each • 1 x 300g Ciabatta Loaf • 2 Large Red Onions
• 4 Vine Tomatoes • 40g Fresh Rocket • Sea Salt and Black Pepper
• 30ml Olive Oil • 30g Salted Butter
• 15g Soft Brown Sugar • 15ml Balsamic Vinegar
Method Bake ciabatta in the oven following directions on the pack. Peel and thickly slice the onions. Melt the butter in a large frying pan and add olive oil. Gently sauté the onions for 10 minutes. Add the sugar and vinegar, season with salt and black pepper and turn up the heat. Cook till sticky – put to one side. Grill, fry or griddle the steaks for about 5 minutes on each side – allow to rest a few minutes. Slice the ciabatta in half lengthways then cut into four. Thinly slice the tomatoes and divide the rocket and tomatoes between the bottom rolls. Slice the steaks and place on top. Pile the onions on the steaks, put on the tops and serve.
