WHIP IT IN TO SHAPE
1. Make sure your eggs are fresh. Older eggs tend to collapse and don’t rise well in the oven. 2. You can add a small amount of vinegar to the meringue mixture at the beginning of whisking to help stabilise the meringue. 3. Only use glass or metal bowls when making meringue.
