Garlic, Chilli & Coriander Marinated King Prawns

SERVES 2 PEOPLE

PREP 15 MINS

Ingredients • 150g pack Garlic, Chilli & Coriander Marinated King Prawns • 50g Spinach Leaves • 150g Basmati Rice, steamed • ½ Sweet Pointed Pepper • ¼ Cucumber • 1 Carrot

Method Trim the carrot and spring onions and then slice into thin strips. Leave in a bowl of cold water to curl. Thinly slice the cucumber and pepper and shred the mangetout. Drain the carrots and spring onion and pat dry. Divide the vegetables, rice and prawns into two bowls. Mix the lime juice, soy sauce and peanut butter together, then drizzle over before sprinkling with seeds. Serve immediately or refrigerate until needed.
