Have you tried tofu? On a plant-based diet, this mildly flavoured curd is deliciously versatile. Here are a few tips to get the best from it

Tofu Tip 1. Press/Drain Press or drain any liquid from the tofu before cooking to help absorb more flavours. Why not experiment with dried spices,

Tofu Tip 3. Scrambled Tofu Heat some rapeseed oil in a frying pan. Add the drained tofu and break it up with a spatula as you sauté. Cook until crisp and dry, then sprinkle with your favourite seasonings. Tofu Tip 4. Oven Baked Pre-heat the oven to 200°C/Gas Mark 6. Cut the drained tofu into cubes and add to a bowl. Add in your chosen seasonings, drizzle with olive oil, toss in some cornflour and mix well. Bake on a tray for 25 minutes and turn once during cooking to ensure an even bake.

Cut the drained tofu into strips and marinate overnight with soy sauce, grated ginger and dried chilli flakes. Remove from marinade and stir-fry with vegetables and noodles.
