Chicken Chasseur Ingredients • 2 Chicken Breasts
• 1 Chicken Stock Pot • 25ml Olive Oil • Black Pepper • 6g fresh Chopped Parsley
• 60ml White Wine • Juice of ½ Lemon • 100g Button Mushrooms • 1 tsp Paprika
• 1 Red Onion • 1 clove Garlic • 1 x 400g tin Chopped Tomatoes with Herbs
Method Peel, and halve the onion and cut into slices. Peel and mince the garlic. Wipe the mushrooms and cut in half. Cut the chicken breasts in half lengthways. In a large, frying pan sauté the chicken and red onions in the olive oil for a few minutes – turning to colour the chicken. Add the chopped garlic and the mushrooms, cook for a further 5 minutes, stirring as you cook. Add the chopped tomatoes, lemon juice, white wine and stock pot, season with the black pepper and the paprika. Bring to the boil, lower the heat and cook for 15 minutes, stirring occasionally. Add the chopped parsley and serve. Grate with pasta, mashed potato or rice.
