St. Andrew’s Day Lamb
Cooking Method 1. Put the lentils in a sieve and place under cold running water for a few seconds to thoroughly rinse them. Shake well and place in a saucepan. 2. Add half the spices, a pinch of garlic and some seasoning. Pour over 200ml water and bring to the boil. Cover and simmer for 10 minutes. 3. While the lentils are cooking, put the lamb on a board, trim away any fat and slice into 1cm thick strips. Place in a bowl, mix in some seasoning and the remaining spices. Cover and leave to stand while you prepare the cauliflower and apricots. 4. Cut the apricots into small pieces. Cut each cauliflower floret into quarters about 3cm thick and set aside. 5. Add the frozen spinach to the lentils, bring back to the boil and add the cauliflower. Re-cover and continue to cook for a further 8-10 minutes, stirring occasionally until everything is tender and the consistency is thick and soupy. Turn off the heat, keep covered and stand until the lamb is ready. 6. Heat the oil in a frying pan until hot. Add the lamb and stir fry carefully and quickly using a wooden spoon for 4-5 minutes, until the lamb is brown all over and just cooked through. Stir in the apricots, turn off the heat, cover with foil and leave to stand for 5 minutes. 7. To serve, spoon the lentils into a sterving bowl, drain the lamb and apricots and pile on top of the lentils. Alternatively, mix the lamb into the lentils and spoon into a serving bowl. Sprinkle with fresh mint. 8. Tip: Accompany this easy-to-make curry with a speedy tomato chutney made from 50g chopped fresh tomato and 10g finely chopped onion. Mix 7.5ml white wine vinegar with 2.5ml honey and mix into the tomatoes, along with some seasoning. Spice it up with chopped red chilli, or cool it down with freshly chopped mint or coriander.
