Cook up a storm this St. Andrew’s Day with our show-stopping lamb recipes, all without forking out.

St. Andrew’s Day Lamb

Cooking Method 1. Put the lentils in a sieve and place under cold running water for a few seconds to thoroughly rinse them. Shake well and place in a saucepan. 2. Add half the spices, a pinch of garlic and some seasoning. Pour over 200ml water and bring to the boil. Cover and simmer for 10 minutes. 3. While the lentils are cooking, put the lamb on a board, trim away any fat and slice into 1cm thick strips. Place in a bowl, mix in some seasoning and the remaining spices. Cover and leave to stand while you prepare the cauliflower and apricots. 4. Cut the apricots into small pieces. Cut each cauliflower floret into quarters about 3cm thick and set aside. 5. Add the frozen spinach to the lentils, bring back to the boil and add the cauliflower. Re-cover and continue to cook for a further 8-10 minutes, stirring occasionally until everything is tender and the consistency is thick and soupy. Turn off the heat, keep covered and stand until the lamb is ready. 6. Heat the oil in a frying pan until hot. Add the lamb and stir fry carefully and quickly using a wooden spoon for 4-5 minutes, until the lamb is brown all over and just cooked through. Stir in the apricots, turn off the heat, cover with foil and leave to stand for 5 minutes. 7. To serve, spoon the lentils into a sterving bowl, drain the lamb and apricots and pile on top of the lentils. Alternatively, mix the lamb into the lentils and spoon into a serving bowl. Sprinkle with fresh mint. 8. Tip: Accompany this easy-to-make curry with a speedy tomato chutney made from 50g chopped fresh tomato and 10g finely chopped onion. Mix 7.5ml white wine vinegar with 2.5ml honey and mix into the tomatoes, along with some seasoning. Spice it up with chopped red chilli, or cool it down with freshly chopped mint or coriander.

Ingredients • 4 Scotch Lamb Leg Steaks • 2 tbsp Olive Oil • 3 tbsp Red Wine Vinegar • 2 tbsp Runny Honey • 2 tbsp Wholegrain Mustard • 3 Rosemary Sprigs, finely chopped • 2 Garlic Cloves, crushed • 2 Red Onions, chopped into wedges • 3 Beetroots, peeled and chopped into 2cm cubes

• 1 small Butternut Squash, peeled and chopped into 2cm cubes • 2 x 250g pouches Pre-Cooked Puy Lentils • 200g Kale, large stalks removed • 100g Feta Cheese,

Ingredients • 4 Scotch Lamb Leg Steaks • 2 tbsp Olive Oil • 3 tbsp Red Wine Vinegar • 2 tbsp Runny Honey • 2 tbsp Wholegrain Mustard Cooking Method 1. Place the lamb leg steaks in a non-metallic dish and add 1 tbsp olive oil, the red wine vinegar, honey, mustard, rosemary, garlic, 1 tsp salt and a good grind of black pepper. Mix well, cover with clingfilm and leave to marinade in the fridge for at least 30 minutes, or up to four hours. Remove from the fridge 30 minutes before cooking to allow the meat to come up to room temperature. 2. Preheat the oven to 180°C fan/200°C. 3. Line a large roasting tray with parchment paper and add the red onions, beetroot and squash. Drizzle with 1 tbsp of olive oil, season, toss together and roast for 30-35 minutes, until softened and slightly caramelised, stirring halfway through. 4. Heat a non-stick frying pan over a high heat, shake off any excess marinade from the lamb steaks and fry on each side for 2-3 minutes, until slightly crispy and caramelised. Set aside. 5. After the vegetables have had 35 minutes, turn the oven up to 200°C fan/220°C. Add the kale and lentils to the roasting tray and stir well. Place the lamb steaks on top and pour over the leftover marinade. Roast near the top shelf of the oven for 6-8 minutes, depending on the thickness of your steaks. 6. Remove and leave to stand for 5 minutes before crumbling over the feta cheese if using and serving. crumbled (optional) • Salt & Black Pepper, to season
