SPICED HONEY COCKTAIL

Ingredients • 70ml Dark Rum • ½ Fresh Lime, juiced • ¼ tsp Honey
• Mint Leaves • Prosecco • Ice Cubes
Method Put the rum, lime juice and honey, along with most of the mint leaves and ice cubes, into a cocktail shaker, and shake well. Strain and pour into a Champagne glass. Top with Prosecco, a couple of ice cubes and a fresh mint leaf.

SPARKLING CRANBERRY COCKTAIL Ingredients • 35ml Cranberry Juice • 1 tsp Pomegranate Seeds • Cava Brut Method Pour cranberry juice into a Champagne glass. Add the pomegranate seeds and top up with Cava Brut.

Ingredients • 50ml Dry Gin • 25ml Lemon Juice • 2 tsp Sugar • 15ml Cranberry Juice • Ground Cinnamon • Lemon Slice Method
Shake the gin, lemon juice and sugar with cubed ice and strain over freshly crushed ice in a rocks glass. Drizzle over cranberry juice. Sprinkle with cinnamon and garnish with a lemon slice.
