For the coulis • 150g Fresh Raspberries • 15g Icing Sugar • 1 tsp Lemon Juice If using an oven, pre-heat to 150°C/Gas Mark 2 If using an air fryer, set to 120°C

Ingredients • 4 Medium Egg Whites • 220g Caster Sugar • 1 tsp Vanilla Essence • 1 flat tsp Cornflour • 1 tsp White Wine Vinegar • 250ml Double Cream

• 400g mixed fresh Berries and Seeds – a mixture of Strawberries, Blueberries, Raspberries, Blackberries and Pomegranate Seeds

Method In a metal or glass bowl, whisk the egg whites until you have soft peaks. Add the sugar, 1 dessert spoon at a time, whisking in between each spoonful, until you have a glossy meringue, then whisk in the cornflour, vinegar and vanilla essence. Mark an 18cm circle on some baking paper. If using the air fryer, place on the trivet. If using the oven, place on the baking tray. Spread the meringue on the paper in the circle, building up the sides to make a nest. Cook in the air fryer for 40 minutes, then gently remove and allow to cool on a wire rack. Alternatively, place in the oven for

70 minutes, then turn off the heat and allow the meringue to cool for 3 hours in the oven. The air fryer meringue with be crisp on the outside but have a softer inside than the one cooked in the oven. While the meringue is cooking, make the coulis. Place the raspberries, lemon juice and icing sugar in a bowl and mash. Push through a sieve, collecting the sweet coulis, then scrape the pulp from the bottom of the sieve, add to the juice and discard the seeds. Whip the cream and fill the middle of the meringue, then top with the berries and drizzle with coulis.
