SERVES 6 | PREP 16 MINS | COOK 6 MINS Jersey Royal Potato Emerald Salad.

Ingredients • 500g Jersey Royal Potatoes • 200g Asparagus • 4 Spring Onions • 1 bag Watercress • 60g Garden Peas • 80g Houmous • Lemon Juice • 150ml Olive Oil • Sea Salt and Black Pepper

Method To make the dressing, blend the peas, houmous, olive oil and lemon juice, then season with salt and pepper. For the salad, shred the spring onions and place the watercress on a large salad plate, then sprinkle over the spring onions. Boil the Jersey Royal potatoes in salted water for 15 minutes and the asparagus in salted water for 5 minutes. Drain both and toss over the watercress. Drizzle over the dressing and serve.

SERVES 12 | PREP 20 MINS | COOK 15 MINS Jersey Royal Potato & Stilton Croquettes.

Ingredients • 500g Jersey Royal Potatoes • 100g Blue Stilton • 4g Fresh Parsley, freshly chopped • 30g Salted Butter

• 150g Fresh

Breadcrumbs • 2 Large Eggs • Sea Salt and Black Pepper • Sunflower Oil, to fry

Method Wipe the potatoes and chop into small chunks. Put potatoes into a saucepan, cover with cold water and season with salt, bring to the boil, cover and cook for 6 minutes until tender. Drain well, add the butter, season with some black pepper and coarsely mash. Crumble over the blue Stilton and the chopped parsley, then mix well. Allow to cool then divide into 12 balls (50g each) and roll them into sausage shapes. Break the eggs into a bowl and whisk well. Dip the croquettes into the beaten eggs, then into the breadcrumbs. Sauté them in some oil in a frying pan until browned. Do this in batches, keep the others warm while you cook the rest. Serve with aioli for the perfect dip.

Ingredients • 500g The Pantry Plain Flour • 7g sachet Fast Action Yeast

Vegetable Focaccia.

• 70ml Olive Oil • 350ml/400ml lukewarm Water • 2 tsp Sea Salt

• Peppers, Red Onions, Asparagus, Spring Onions, Courgette or veg of your choice • 25 x 35cm Baking Tray, lightly greased

Method Sift the flour into a large bowl. Add the yeast to one side and mix in, then add the fine salt to the other side and mix in. With a balloon whisk, combine everything together. Add 30ml of the oil and gradually add the water until you have a slightly sticky dough. Turn this out onto a lightly floured board and knead for 5-8 minutes until you have a soft dough. Place the dough into a clean glass bowl, cover with a clean tea towel and leave somewhere warm to prove for 60 minutes or until double in size.

Stretch the dough to fit the baking tray, cover with the tea towel and allow to prove for another 40 minutes. Pre-heat the oven to 220°C/Gas Mark 7. Push your fingers in the dough to make dimples. Using your chosen vegetables, make a pattern on the top. Brush the top of the dough and the vegetables with the olive oil. Sprinkle with sea salt and bake in the oven for 25 minutes. Once cooked, brush with some oil and serve warm or cold.

• 400g mixed fresh Berries and Seeds – a mixture of Strawberries, Blueberries, Raspberries, Blackberries and Pomegranate Seeds

Method In a metal or glass bowl, whisk the egg whites until you have soft peaks. Add the sugar, 1 dessert spoon at a time, whisking in between each spoonful, until you have a glossy meringue, then whisk in the cornflour, vinegar and vanilla essence. Mark an 18cm circle on some baking paper. If using the air fryer, place on the trivet. If using the oven, place on the baking tray. Spread the meringue on the paper in the circle, building up the sides to make a nest. Cook in the air fryer for 40 minutes, then gently remove and allow to cool on a wire rack. Alternatively, place in the oven for

70 minutes, then turn off the heat and allow the meringue to cool for 3 hours in the oven. The air fryer meringue with be crisp on the outside but have a softer inside than the one cooked in the oven. While the meringue is cooking, make the coulis. Place the raspberries, lemon juice and icing sugar in a bowl and mash. Push through a sieve, collecting the sweet coulis, then scrape the pulp from the bottom of the sieve, add to the juice and discard the seeds. Whip the cream and fill the middle of the meringue, then top with the berries and drizzle with coulis.
