Quick and Easy Paella

SERVES 4 PEOPLE

You will need • 1 Sachet Spanish Paella Seasoning • 300g Paella Rice • 100g Spanish Chorizo • 1 Red Pointed Pepper • 1 Large Onion

• 100g Frozen Garden Peas • 200g Large Peeled Prawns • 25ml Olive Oil • 5g Chopped fresh Parsley • 1 Large Lemon (cut into 4 wedges)

Method Peel, halve and finely dice the onion. Cut the pepper in half lengthways – remove any seeds and finely chop. Cut the chorizo in half lengthways and cut into thin slices. Heat the oil in a large frying pan. Sauté the onions and chorizo for a few minutes on a low heat. Then add the red peppers and cook a further minute. Add the rice along with the paella seasoning and 800ml cold water. Mix well and bring to a boil – stirring as you cook. Reduce the heat and simmer for 15 minutes. Add the prawns and peas – stir through and cook for another 5 minutes. Serve topped with the chopped parsley and lemon wedges to squeeze.
