RECIPE IDEA.

SERVES 4 | PREP 15 MINS | COOK 5 MINS Greek Tomato & Feta Fritters.

Ingredients • 1 small Cucumber • 3 large Tomatoes • ½ an Onion • ½ bunch of Parsley

Method Halve the cucumber lengthways, scrape out the seeds and grate into a sieve. Mix with a pinch of salt and allow to drain. Finely chop the tomatoes, onion and herbs, keeping half the mint to one side. Add the egg and grate in the courgette. Add 8-10 tablespoons of flour, the feta and a large pinch of salt and mix. Heat ½ an inch of vegetable oil in a

non-stick pan. Add the mix in heaped tablespoons, keeping them apart. Fry for 3 minutes each side. Remove and place on kitchen paper. Squeeze any remaining liquid from the cucumber and mix with the yogurt, juice of ½ a lemon, the remaining mint and a pinch of salt. Grate in the garlic and spread over a small plate with the fritters served on top.

• ½ bunch Mint • 1 Scottish Egg • 1 Courgette • 8-10 tbsp Self-Raising Flour • 200g Feta • 300g Greek Yogurt • ½ a Lemon • 1 Garlic Clove

SERVES 4 | PREP 10 MINS | COOK 15 MINS Tomato Bruschetta with Soft Cheese.

Ingredients • 220g Specially Selected Piccolo Tomatoes • 220g Specially Selected Golden Cherry Tomatoes • 5 Garlic Cloves

• 3 tbsp Scottish Rapeseed Oil

• 100g Soft Cheese • Handful of Fresh Basil Leaves

Method Preheat the oven to 200°C/Gas Mark 4. Take the tomatoes off the vine and slice into halves. Finely slice the garlic. Place the tomatoes and garlic into a roasting tin, drizzle with the oil and season with salt and pepper. Roast for 15-20 minutes until the tomatoes are jammy and the garlic golden. Allow to cool. Cut the ciabatta rolls on the diagonal into 2cm slices and either griddle or toast. Spread each toast with soft cheese. Divide the tomato and garlic mixture between the toast. Scatter over the basil leaves.
