Perfect with

• Pre-heat the oven to 200°C/180°C Fan/Gas Mark 6 • Cut off the head with a sharp knife • Cut 6 slits down the salmon as far as the bone, this helps to evenly cook and gives extra area to add flavour • Open the cavity of the salmon and dab with kitchen roll to remove any excess moisture • Line a baking tray with foil and spritz with oil, placing the salmon on top • Fill the cavity and the slits with citrus fruit and herbs to infuse and add moisture as the fish cooks • Cover loosely with foil and bake on the middle shelf for around 45 minutes • Don’t overcook the fish – cooking for too long will leave it dry and ruin its flavour • Garnish with fresh herbs, pomegranate seeds and a good helping of salt and cracked black pepper • Leftovers – enjoy it cold, flaked over a fresh salad or made into fish cakes How to cook the perfect whole salmon.
